Abstract
In this study, a simple and rapid electrophoretic procedure was developed to determine the amylose content in wheat starch. The experimental approach was based on agarose gels using a borate buffer and entailed optimisation of gel concentration, staining method, elecfrophoretic conditions and starch solubilisation conditions. Laser densitometry was used to quantify the amylose component.
